Tasty tiffin recipes: Crunchy Poha and Roti Sandwiches

We invited Get Ahead readers to share quick-fix office recipes with us -- easily-prepared foods that takes less than an hour to whip up before you head to work in the morning.

We've been flooded with responses and as part of an ongoing series, present two lunch recipes that you can carry in your dabba tomorrow.

Here is Hansveen Sabharwal's recipe for Crunchy Poha:

Ingredients:

  • Chopped onions
  • Mustard seeds (rai)
  • Beaten rice (poha)
  • Peanuts
  • Red pepper powder
  • Turmeric powder (haldi)
  • Salt to taste
  • Oil
  • Coriander to garnish

Method of preparation:

  • Heat one big tablespoon of oil in a cooking pan.
  • Shallow-fry the peanuts in the pan, removing them once they turn goldern-brown.
  • In the same pan, place the rai and chopped onions, stirring them till the onions go soft -- don't wait for them to fry till they are golden-brown.
  • Add the turmeric powder, red pepper and salt to the pan.
  • Place the poha in a bowl and pour water over it. Then put it in the pan, stirring it around to mix with the other ingredients and allowing it to cook till yellow in colour.
  • Before serving the crunchy poha, mix in the peanuts and garnish with coriander leaves.

Poonam Dedhia sent in this unique recipe for what she calls 'Roti Sandwiches':

Ingredients:

  • 2 rotis
  • 3 potatoes
  • 1/2 a cube of low-fat cheese
  • 1/2 a cube of low-fat paneer
  • 1/2 tbsp ginger
  • 1/2 tbsp green chillie paste
  • Coriander leaves
  • Black pepper powder (optional)
  • Salt to taste

Method of preparation:

  • Boil the potatoes and cut them into small cubes.
  • Similarly, also cut the paneer and cheese into small cubes.
  • Mix all the ingredients, except for the two rotis, in a bowl.
  • Spread half the mix on one half of a roti and fold it, so as to create a sandwich. Do the same to the other roti.
  • Toast both in a sandwich toaster -- your delicious roti sandwiches are ready!
