We invited Get Ahead readers to share quick-fix office recipes with us -- easily-prepared foods that takes less than an hour to whip up before you head to work in the morning. We've been flooded with responses and as part of an ongoing series, present three lunch recipes that you can carry in your dabba.
Vani Sudarshan sent in this delicious recipe for Rice Rotis with Coconut Chutney:
Ingredients:
For the rotis:
- 1 large bowl of rice powder
- ½ tbsp cumin seeds
- 4 green chillies
- 1 small bowl of finely chopped coriander leaves
- 1 small bowl of finely chopped onions
- Salt to taste
For the chutney:
- 1 cup grated coconut
- 2 green chillies
- 1 small piece of ginger
- 1/2 tbsp mustard seeds
- 1 tsp tamarind water or grated raw mango
- ½ tsp sugar
- Salt to taste
- A pinch of asafoetida
Method of preparation:
For the rotis:
- Mix all the ingredients in a bowl and add water, kneading into a soft dough.
- Break off small balls of the dough and on a plastic sheet powdered with some dry rice flour, flatten and then roll into a round roti shape using a rolling pin.
- Bake the rotis on a hot griddle (tawa). They are now ready to be eaten.
For the coconut chutney:
- Grind all of the ingredients together except for the mustard seeds and asafoetida and set aside in a bowl.
- Next, heat 1 tsp of oil in a frying pan and add both the mustard seeds and the punch of asafoetida.
- Take the frying pan off the stove and mix the contents with the rest of the ingredients in the bowl. Your coconut chutney is ready.
Poonam Menon Mallick sent in her simple but tasty take on Chicken Sandwiches:
Ingredients:
- Sandwich bread
- Boneless chicken
- Finely diced carrots
- Chopped beans
- Mayonnaise
- Oregano
- Chillie flakes (optional)
- Salt to taste
- Butter
Method of preparation:
- Pressure-cook the boneless chicken along with the carrots, beans and salt. After about four whistles, drain away the water and shred the chicken into small pieces.
- Empty the shredded chicken, carrots and beans into a bowl. Add a generous amount of mayonnaise, along with the oregano and chillie flakes and mix well.
- Butter the bread and sandwich the chicken-mayo mixture between two slices.
- Once done, wrap your sandwiches neatly in silver foil and carry them to the office for lunch.
And finally, here's how to make Egg Rice by Dhanesh MS:
Ingredients:
- Pre-boiled rice (a standard lunch box full)
- 2 eggs
- 1 finely chopped onion
- 2 tsps cooking oil
- Chillie powder to taste
- Salt to taste
Method of preparation:
- Beat the eggs along with the onion, chillie powder and salt.
- Heat the cooking oil in a deep pan, add the beaten egg and stir briskly.
- Add the rice to the pan when the egg is half-done and continue stirring till the egg is completely cooked.
- Take your Egg Rice off the stove, transfer it into your lunch box and run!
