We invited Get Ahead readers to share their summer recipes with us -- light, easy to digest preparations that have a cooling effect in the sweltering heat. As part of an ongoing series, we present three cool summer drinks from readers.
First up is a recipe for Lassi from Vilas:
Cuisine: Punjabi
Type: Vegetarian
Preparation time: 10 minutes
Ingredients:
- 1 cup curd
- 1/2 cup water
- 3-4 tsps of sugar
- A few drops of rose essence
- A pinch of salt
Preparation:
- Mix all the ingredients in a mixer till well-blended.
- Serve chilled.
Next we have Satya's Green Buttermilk preparation:
Cuisine: Andhra
Type: Vegetarian
Preparation time: 5 minutes
Ingredients:
- 2 cups fresh curd
- A few pudina leaves
- A few coriander leaves
- A few curry leaves.
- Jeera powder,
- An inch of ginger
- Salt to taste
Preparation:
- Wash all the leaves and ginger with water.
- Blend them; add curd, salt and jeera powder and blend again again.
- Filter the buttermilk to separate the pulp and serve.
And here is a unique Carrot Milkshake recipe from Swapna Veldanda:
Cuisine: Andhra
Type: Vegetarian
Preparation time: 10 minutes
Ingredients:
- 5 carrots
- 1/2 litre milk
- 25 gms cashew nuts
- 4 pods of cardamom
- A few powdered pistachios
- 4 tbsps sugar
Preparation:
- Boil carrots; grind into a pulp and set aside.
- Mix the milk with the rest of the ingredients and then add in the carrot mix.
- Refrigerate and serve chilled.
