Chicken Katsu Sando

The Japanese style fried chicken burger is the perfect answer to your mid-week cravings.

Ingredients

For curry mayo

  • 3 tbsp mayonnaise
  • 2 tbsp curry powder
  • 50 ml ketchup
  • 1 tbsp soy sauce
  • 1 tsp worcestershire sauce
  • 1 tsp mustard powder
  • 1 tbsp runny honey

For chicken katsu

  • 1 egg
  • 100 gm plain flour
  • 50 gm breadcrumbs
  • 1 chicken breast
  • Oil for frying
  • 2 burger buns of your choice
  • 2-3 lettuce leaves
  • ¼ cup jalapenos

For zingy slaw

  • ½ carrot grated
  • ¼ cabbage grated
  • ¼ radish grated
  • ½ lime juice

Method
For curry mayo

  • Combine all ingredients in a bowl and stir until smooth and set aside.

For zingy slaw

  • Combine all ingredients in a bowl, add some salt, stir well and set aside.

For chicken katsu

  • Rub the chicken with salt and pepper, cover with cling film and marinate in the refrigerator for 2 hours minimum
  • Crack an egg into 1 bowl and in another bowl mix flour and breadcrumbs
  • Remove the chicken from the refrigerator and dip into the egg mix followed by panko mix and set aside in a plate
  • Heat oil in a deep frying pan on high flame, add the chicken breast and fry for 10 mins until cooked.
  • Toast the breads, spread some curry mayo on the base of the burger bun, add jalapenos, and lettuce.
  • Layer it with the chicken breast, zingy slaw and close it with some curry mayo on the other half of the bun.
