How to make an eggless mousse

For those of you who love sweets but don't eat eggs, we feature some easy-to-make eggless desserts that you can whip up at home.

Bunty Mahajan, chef and owner of Deliciae, the dessert cafe at Out of the Blue, a restaurant in Bandra, Mumbai has already shared her eggless recipes for Fruit Flan, Mocha Oreo Pie and Peach Passion Tarts.

Next, she has two more fruit delights.  

Orange Mousse

~Ingredients

200 gm low fat cream
15 gm agar
3 tsp sweetener (Zero)
3 drops orange essence
2 drops orange colour
3 fresh oranges, peeled and skinned
 
~Method

Dissolve agar agar as per instructions on the packet.

Whip the cream. Then add sweetener, essence, colour, and dissolved agar agar.

Fold in the oranges.

Pour in individual bowls and chill.

Decorate with oranges.
 
Strawberry Mist

~Ingredients

For the crust

1  packet Good Day biscuits
3-4 tbsp cream

For the strawberry filling

150 gm curd (hung for a few hours in a muslin cloth to drain water)
150 gm low fat cream
25 gm agar agar
50 gm strawberry pulp
2 tbsp sweetener (Zero)
 
~Method

Crush biscuits but not too fine. Add the cream to bind.

Press into a spring-form tin (circular bakeware equipment).

Beat hung curd with the sweetener.

Fold in the cream.

Dissolve agar as per instructions on the packet and fold into the cream.

Fold in the strawberry pulp, pour this over the base and chill overnight. 

Decorate with a cream border and fresh strawberries or strawberry pulp in the centre.
