Chef Hiralal of Mumbai's Khau Galli Restaurant shows us how to prepare this street favourite at home.
Preparation time: About 3 minutes
Ingredients:
- A few flat puris (crisp)
- Fine sev
- Chopped onion
- Tamarind and date chutney
- Green chutney
- Chopped coriander leaves
- Boiled, mashed potato
- Chaat masala
- Garlic chutney
Method:
- Lay out six puris on a plate and add some mashed potatoes onto each.
- Sprinkle chopped onions on top.
- Next, add on the spicy and sweet chutneys.
- Sprinkle chaat masala.
- Then place a few pieces of tomatoes on each puri.
- Add a little garlic chutney and a few drops of lemon juice on top.
- Top off with sev and garnish with coriander leaves...and add one flat puri in the centre as the final touch!
