Ingredients:
- Penne pasta (boiled and set aside)
- Olive oil
- Chopped garlic
- Broccoli
- Red and yellow bell peppers
- Zucchini
- Dried oregano
- Chilli flakes
- Grated Parmesan cheese
- Chopped basil leaves
- A pinch of sugar
- Salt
- Black pepper
- Red sauce (Chopped tomatoes and tomato puree)
Preparation
- Heat olive oil in a pan with minced garlic and chopped onions.
- Add the vegetables and saute for a minute or so.
- Add salt and black pepper.
- Add dried oregano and chilli flakes and saute some more.
- Now add red sauce and mix well over a high flame. Do not overcook the vegetables.
- Add some more salt, sugar, oregano and black pepper.
- Toss in the pasta and stir continuously.
- Mix well and add Parmesan cheese, and freshly chopped basil leaves.
- Mix well on a high flame.
- Garnish with grated Parmesan cheese and basil leaves.
- Serve hot with garlic bread.
