Video: How to make Pasta Arrabiata

Foodies Rajesh Karkera and Abhishek Mande visit Mumbai's Khau Galli restaurant, where the chef shows you how to make lip-smacking Pasta Arabiata at home. Take a look!

Ingredients:

  • Penne pasta (boiled and set aside)
  • Olive oil
  • Chopped garlic
  • Broccoli
  • Red and yellow bell peppers
  • Zucchini
  • Dried oregano
  • Chilli flakes
  • Grated Parmesan cheese
  • Chopped basil leaves
  • A pinch of sugar
  • Salt
  • Black pepper
  • Red sauce (Chopped tomatoes and tomato puree)

Preparation

  • Heat olive oil in a pan with minced garlic and chopped onions.
  • Add the vegetables and saute for a minute or so.
  • Add salt and black pepper.
  • Add dried oregano and chilli flakes and saute some more.
  • Now add red sauce and mix well over a high flame. Do not overcook the vegetables.
  • Add some more salt, sugar, oregano and black pepper.
  • Toss in the pasta and stir continuously.
  • Mix well and add Parmesan cheese, and freshly chopped basil leaves.
  • Mix well on a high flame.
  • Garnish with grated Parmesan cheese and basil leaves.
  • Serve hot with garlic bread.
